Owner of Chop Shop Carnivorium; Melinda Dimitriades is passionate about supporting Australian farmers and Free Range meat products. Chop Shop Carnivorium sources ethical free range meats from Aussie farmers and processes small goods that are chemical nitrite free.
Melinda has a notable resume. Starting out in Law, Melinda found herself working in the hospitality industry and eventually moved from behind the counter, to the kitchen. Over the years, she has worked at farmers markets and with boutique food producers; worked for Sydney providores Australia on a Plate and for Marco Vineis at Gastronomica in London; purchased and rebranded Affineur; and bought a butcher shop – Chop Shop Carnivorium.
Over the years, customers loved learning the story of the farms and artisan producers. Melinda has built relationships of trust in her selection of produce, shared knowledge of breeds, ethical farming practices and clean, small batch artisanal production.
CHOP SHOP carnivorium has become a unique and complete platform in promoting provenance and clean food, supplying high end retail with pastured, preservative free, retail ready smallgoods.
